Ingredients:
2 cups urad dal
1 tsp cumin seeds
1 tsp black peppercorns, crushed
2 sprig curry leaves, chopped
2 green chili, chopped
1 tbsp chopped ginger
Salt to taste
Oil for deep frying
Water if needed to make the batter
Instructions:
- Soak the urad dal for overnight.
- Grind the soaked dal to a smooth batter with little water if required.
- Add the spices, herbs, and salt.
- Heat oil.
- Make the vada as round shape and make a hole in center.
- Gently slid the vada in to the oil.the oil should be medium hot.
- Fry the vada till they become evenly browned and crisp.
- Drain them on tissue paper to remove excess oil.
- Serve the medhu vadas, hot with sambar and coconut chutney.
