Ingredients:
Maida – 2 cup
Salt as required
Oil – 4tsp
Water as required
Boiled Potato – 4 (cut it into 1 inch size pieces)
Big Onion – 2
Peas – 1/4 cup
Ginger chopped – 1tsp
Chopped Coriander leaves – 1 bunch
Coriander Powder – 1tsp
Cumin Powder – 1/2tsp
Chat masala – 1tsp
Amchur Powder – 1tsp
Garam masala powder – 1/2tsp
Lemon extract – 2tsp
Maida water – 2tspn maida(Add 1/4 tspn water with maida)
Oil – to fry
Preparation:
- In a bowl mix maida and salt.
- Add 4 tsp oil and rub until the mixture resembles coarse breadcrumbs. Slowly add about 4 tablespoons water and knead the dough until it is smooth.
- Cover it and set aside for 30 minutes.
- Heat 5 tsp oil in a pan. Add onion and fry till its color changes.
- Add ginger, green chilli, peas, coriander leaves, fry it for a minute.
- Now add potato, coriander powder, cumin powder, chat masala, amchur powder and lemon extract, mix well and cook on low heat for 2-3 minutes.
- Knead the dough again. Divide it and make a balls.
- Roll it into flat round shape and cut it into half. Make the half into a cone by sticking seam together with a little maida water.
- Fill the cone with about 2 tsp of the potato mixture. Stick the top of the cone together with a little water.
- Heat about 2 inches of oil for deep frying over a medium-low flame.
- When the oil is hot, carefully put the samosa. Fry slowly, turning the samosas until they are golden brown and crisp.
- Drain excess oil and serve hot with chutney.
